Blue Fish with Cherry Tomatoes
First, you’ll need a piece of fish. My dad was kind enough to catch one for me fresh.
Pat dry. Get excited.
1/4 tsp garlic powder. 1/4 tsp mustard powder. Oh, and have you labeled your spices today? I think it’s time.
Mix those in with 2 tbsp flour + some salt & pepper. I added a pinch of cayenne because I can’t help myself.
Mix it all up.
Crack an egg (on your head, let the yolk drip down, let the yolk drip down…)
Our old friend, Marsala.
Add 2 capfuls to the egg (which you'll then mix up).
Three amigos.
So the fish gets dredged in the flour first. Then the egg. Then back to the flour.
Into the olive oily (super hot) pan. Let it cook for 3 or so minutes.
Make it look like this, I tell you! (Ha, you can see me in the tea kettle.)
Cherry tomato bombs.
Add yer bombs.
Chop yer fresh prince of parse.
Sexy.
Looks good enough to eat.
